Yummy Recipes: Gluten Free Almond Power Bars Recipe Review…

I found this recipe at www.elanaspantry.com, all the recipes I have tried of Elana’s have been fabulous! I also recommend her recipe book even if you are not trying to be gluten or grain free, her food is super tasty! You can find Elana’s book, “The Gluten Free Almond Flour Cookbook” in my “Books I Recommend” box at the right hand side of this page. I did alter the recipe a bit by using raw honey in place of agave nectar and by sprinkling raw shredded coconut on top of the chocolate. The picture below shows how my bars turned out. Unfortunately when I made these Mike was out of town so I ended up eating almost all those bars by myself in two days! *blush* That tells you just how good they are! I haven’t made them since for fear I will eat the whole pan again! Have a great day!!!

Gluten Free Power Bars

 

Gluten Free Almond Power Bars

2 cups almonds (raw)

½ cup flax meal (flax seeds ground in a Vitamix or coffee grinder)

½ cup raw shredded coconut + 2-4 Tbsps for topping

½ cup unsalted creamy roasted almond butter

½ teaspoon celtic sea salt

½ cup coconut oil

4 drops stevia

1 tablespoon raw honey

1 tablespoon vanilla extract

1 cup dark chocolate chips 73% cacao (optional)

  1. Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor
  2. Pulse briefly, about 10 seconds
  3. In a small sauce pan, melt coconut oil over very low heat
  4. Remove coconut oil from stove, stir stevia, raw honey and vanilla into oil
  5. Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste
  6. Press mixture into an 8 x 8 glass baking dish
  7. Chill in refrigerator for 1 hour, until mixture hardens
  8. In a small saucepan, melt chocolate over very low heat, stirring continuously
  9. Spread melted chocolate over bars, sprinkle 2-4 Tbsp raw coconut on top of the chocolate then return to refrigerator for 30 minutes, until chocolate hardens
  10. Remove from refrigerator, cut into bars and serve

Makes 20 bars

  1. Can’t go wrong with an Elana recipe. We haven’t found a bad one yet. I love how adaptable they are. We customize them all the time. I like that I can make her cookie recipes and not feel bad letting Jovie eat one for breakfast. Chock full of protein and healthy fats. Way better than a bowl of sugary cereal or a poptart. Yuck!
