I made this in my “scatter brained” moment last night. MMmmm! It is so good! It is perfectly moist, a perfect crust (I give kudos to my stone cookware for that) and it was just the right sweetness so that I could add a little whip cream on top and it wasn’t too sweet, just perfect! We also put almond butter on it for breakfast. Yum, yum! I hope you enjoy it!
Mae’s Chai Cinnamon Zucchini Bread
3 cups all-purpose flour (I used this Spelt flour)
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3-4 scoops Chai Tea powder (I used this Chai Tea)
1 heaping Tablespoon ground cinnamon
1 cup vegetable oil
1/2 cup raw honey
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts (opt)
1. Spray pans with cooking spray (some prefer to grease and flour, I do not) two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
2. Sift flour (yep I sifted my flour), salt, baking powder, soda, Chai powder and cinnamon together in a bowl.
3. Beat eggs, oil, vanilla, and honey together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans. (I skipped the nuts, my oldest kiddo doesn’t like them)
4. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool. (I ate mine hot! YUM!!!)
