Most people I know in the summer and autumn pick up some veggies from their own garden, a local farmers market or a box from a local CSA. Sometimes we end up with an over abundance and no recipes! I have had that happen a few times! Here is a recipe I created one day when I ended up in one of those “over abundance” moments. It is super TASTY and full of fall flavor! There is a crazy mix of flavors and veggies in this pot, it will delight your taste buds! Mike and I quite literally stuffed ourselves with this dish, we went back for thirds! YUM! I hope you enjoy!
Mae’s Harvest Dinner Pot
You will need one bunch Fresh basil roughly chopped in bit size pieces. (Set aside for garnish)
2-3 heaping Tbsps of Better Then Bullion Beef Flavor.
salt and pepper to taste (I use rosemary infused salt),
1-2 garlic cloves minced,
1/2 – 1 Tbsp dried rosemary and sage chopped fine or ground.
1-2 cups water (not pictured)
4 -5 zucchinis chopped in pieces big enough to stick on a skewer. (set aside)
2 large red peppers chopped
4-6 carrots chopped
4-5 small beets chopped
2 small onions chopped
1 lb thin sliced beef (not pictured)
2 Tbsp oil (I like garlic infused)
Spray crockpot with cooking spray. Pour 2 Tbsp oil on bottom of pot. Place beef on oil.
Top beef with all the chopped veggies EXCEPT the zucchini, herbs, bullion, salt and pepper.
4 tomatoes chopped
2-3 avocados cut in bite sized pieces (not pictured)
Set aside tomatoes and avocado’s for topping do not put them in crockpot!
I like to keep a paper towel next to my cutting board so I can throw all the compost on it.
Then you can easily wrap it up and take it to your compost bin or garbage.
Drizzle 2 Tbsp olive oil over veggies, mix over beef (do not mix beef up let veggies sit on top of it),
pour water in and cook for 3-5 hours on high. 5-6 hours on low.
Take your zucchini and toss it with salt, pepper and 2-3 Tbsp olive oil.
Drizzle bottom of baking dish with oil, salt and pepper as well.
Stick zucchini pieces on skewers roll in pan, put wrap over it and marinate till 15 mins before dinner.
Grill skewers 15 minutes before dinner for a yummy side to your Harvest pot.
One hour before dinner make rice to eat with your harvest pot. I like brown rice.
