Late one evening as I was doing some reading I felt a grumble below. I try to refrain from late night snacking but this grumble was quickly becoming an angry roar. My instincts lead me to the kitchen were I do not keep snacky foods around so I either had to make something or eat leftover meatloaf. Mae’s Late Night Snack…
- 1/4 – 1/2 cup coconut cream from one refrigerated can of coconut milk (not whipped)
- 1 banana sliced
- 2 Tbsp chocolate chips (I like dark chocolate)
- 2 Tbsp flaked coconut (toasted would be yummy!)
- 1 Tbsp slivered almonds
- 1 Tbsp honey (optional, I didn’t use it in mine)
I layered my bowl like this, banana, coconut cream, chocolate chips, almonds, coconut flakes and if you desire more sweetness drizzle some honey over top. YUM YUM YUMMY!!! Hubs tried it and LOVED it too! YUM!
I have become slightly obsessed with coconut cream lately! I think I’ll be making up a coconut ice cream soon! I hope you all have a great weekend!
