Mae’s Late Night Snack: Coconut Cream, Bananas, Chocolate OH MY!!!

Late one evening as I was doing some reading I felt a grumble below. I try to refrain from late night snacking but this grumble was quickly becoming an angry roar. My instincts lead me to the kitchen were I do not keep snacky foods around so I either had to make something or eat leftover meatloaf. The meatloaf is great but I was in the mood for something a bit lighter then that. I opened the fridge and in less then five minutes I had created this…

Mae’s Late Night Snack…

  • 1/4 – 1/2 cup coconut cream from one refrigerated can of coconut milk (not whipped)
  • 1 banana sliced
  • 2 Tbsp chocolate chips (I like dark chocolate)
  • 2 Tbsp flaked coconut (toasted would be yummy!)
  • 1 Tbsp slivered almonds
  • 1 Tbsp honey (optional, I didn’t use it in mine)

I layered my bowl like this, banana, coconut cream, chocolate chips, almonds, coconut flakes and if you desire more sweetness drizzle some honey over top. YUM YUM YUMMY!!! Hubs tried it and LOVED it too! YUM!

I have become slightly obsessed with coconut cream lately! I think I’ll be making up a coconut ice cream soon! I hope you all have a great weekend!     This looks right up my alley. Yum! And you should totally do the coconut ice cream. It’s pretty hard to mess up. I whisk up coconut milk, vanilla or cocoa powder, maple syrup (sometimes some coconut extract) and whatever else strikes my fancy to taste. Serve with toasted coconut or nuts. So good. I make it on 4th of July or for other family gatherings for those of us who are dairy free. Without fail, it gets gobbled up faster than the regular homemade ice cream.

    I’m starting to get a little bit of my appetite back. Now if I could get up the energy to cook at all. That would be wonderful! :o)

    I have not used coconut milk before and am wondering how you are making it into coconut cream: by whipping? I, too, have the late night hunger problem if I stay up too late! Usually I have Fage 0% Greek yogurt with honey and/or walnuts + cinnamon, or with some fresh fruit. Your idea sounds simple and delicious.
