I needed a QUICK muffin recipe one day to go with some soup I had made. All I had for fruit was pureed pumpkin and some brown bananas so I took a basic muffin recipe and created a tasty treat! These muffins are not overly sweet. I like them that way because I like to add honey to my muffin right before eating it. If you want a sweeter muffin add 1/2- 1 cup more of honey or sugar. I did not use nuts or chocolate in mine but put that in the ingredients list because I plan to try it in the future. Dried cranberries would be yummy in these as well! YUM YUM!!!
Mae’s Pumpkin Banana Muffins
3 cups all-purpose flour
2 teaspoon baking soda
2 teaspoon baking powder
1 teaspoon salt
1/2 cup butter (or coconut oil), melted
1 cup honey
3 bananas, mashed
1 cup pureed pumpkin
1 cup chocolate chips, optional
1/2 cup chopped walnuts, optional
Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
In a stand mixer, combine flour, baking soda, baking powder and salt (mix low speed). Then add bananas, pumpkins, honey, egg and melted butter or coconut oil (I have used both butter and coconut oil with the same results). Mix at medium speed till all combined. Stir in chocolate chips and nuts if using. Spoon batter into prepared muffin pans.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean and muffins are looking a golden brown.
Makes 18 muffins
