A Taste Of Italy…
I enjoy doing a week of meal plans around a certain countries. This week as I was searching for recipes I was feeling drawn to Italian cuisine. I should just name this menu the “I Love Giada” menu since most of my inspiration came from her recipes. I am very excited about Friday’s meal! We are having company over for dinner and I cannot wait to try this new lasagna recipe out for them and re-make the VERY VERY YUMMY Coconut Cake I created last week! I will live this week for Friday night’s desert! Remember all the blue wording are links to sources. Enjoy!
Favorite Meal Of The Week…
I put a very odd meal together this week, it just sort of happened. I ended up making my Coconut Cake MMMMM (mouth watering NOW!) on the same night that I made the Soba Noodles with Sweet Ginger Scallion Sauce recipe from www.simplyreem.com. The two recipes may not really go together but they both tickled our taste buds!!! YUM YUM YUMMY! I suggest you try them both out!
Sunday
- Breakfast – Pamela’s Pancakes! (I like to add buttermilk in place of water when I have it)
- Lunch – Smoothies
- Dinner – Out to Pizza with friends!
Monday
- Breakfast – Bob’s Red Mill Scottish Oatmeal
- Lunch – Leftover Pizza from Sunday
- Dinner – Smoothies (I was working on this post, have a very sad baby with diaper rash and laundry, who has time for dinner tonight?! haha!)
Tuesday
- Breakfast – Bob’s Red Mill 10 Grain Hot Cereal
- Lunch – Smoothies
- Dinner – A crusty Italian bread with Tuscan White Bean and Garlic Soup
Wednesday
- Breakfast – Granola I add my own touches to Alton Brown’s recipe
- Lunch – Smoothies
- Dinner – Meatloaf Parmesan with a side salad
Thursday
- Breakfast – Coffee Shop 🙂
- Lunch – PB&J’s
- Dinner – Leftovers!
Friday
- Breakfast – Bob’s Red Mill Muesli, cooked
- Lunch – Smoothies
- Dinner – Caprese Panzanella Salad (recipe coming soon), Short Rib Lasagna Rolls, Mae’s Chocolate Chip Cake With Coconut Cream Frosting
Saturday
- Breakfast – I am going to make up a new muffin recipe so come back next week and I’ll share the recipe! 🙂
- Lunch – Leftovers!
- Dinner – Big Italian Salad and Rosemary apple & goat cheese crostini (since my family refuses goat cheese 🙁 I will find a soft tangy replacement)

a lot of Americanized versions have you add heavy cream…I say skip it!!
this week our menu includes:
a Mexican lasagna of sorts with a roasted tomatillo sauce (yum!)
trout with rice and baby green beans
breakfast for dinner…love
pot roast with sweet potatoes
grilled burritos
smoked salmon pasta
and one big question mark…maybe a date night!!
I’ll have to check out the short rib lasagna recipe…I LOVE short ribs!!

Your meal plan sounds FABULOUS! 🙂 I have NEVER made pot roast, can you believe it?! My mom did plenty of times while I was growing up, I think it’s about time I try it in the next few weeks! Thanks for sharing! 🙂
