Hey All!
Okay I haven’t fallen off the face of the earth alotho sometimes I look back and wonder… I have been getting my family into a schedule and ready for school. We also had some dear family friends come to visit so I have been pretty busy keeping up with everything. Thank you for your patience with me
I hope to be back more regullarly starting Monday the 19th. I have so many more things to share and talk about so hold on to your britches we are in for more fun at Strive For Progress! Today I wanted to give you a lil update on how my “month of meals” is going and how the big cook day went.
Now cooking eleven to twelve meals in one day sounds a bit daunting. It wasn’t that bad. It was tiring and on top of that our friends were here so I felt bad cooking all day, they were cool with it, they just needed a day to veg and relax so it worked out great! I will say that it was FUN! I LOVE, LOVE, LOVE to cook and bake. To have a whole day of it was a blast! I enjoyed every second! The only negative part I had was how tired I was by the end of it. I will trade that tiredness for the ease of having breakfast, lunch and dinner on the table any day! It has been a very easy week for meals. I have been meal planning for a few years now, I am currently LOVING Plan to Eat (look for the button at the right side of this page to find out more). To add a freezer full of meals on top of a completely planned out month of meals has only made things THAT much easier! WOW!
I have a few things to figure out as far as the process and planning for this freezer month of meals. I am also doing a few regular crockpot and cooking days. One problem I run into, freezer meals or not is that I like to plan a lot of leftovers for ease and financial sake. I have miss judged some portions so like tonight it was supposed to be leftover but there are none. I luckily had an extra freezer meal from a leftover chicken crock-pot dish I made two weeks ago. I will throw biscuit mix on top of it, crock it and call it good. Which makes a good point, freeze your leftovers to make new meals later
Anyway I am very happy I found Once A Month Mom and I will be using her menu and cooking ideas next month! I will also, starting next month, post my munu’s so you can see what I am cooking every month. If I can I will post links to the recipes. Okay baby is crying, kiddo is out of her quiet time and one is needing help with homework, better run! Have a great weekend all!

PS In the picture above there are a few meals missing from the freezer and I also am starting to mix up things like cookies “flash freezing” them and throwing them in a bag so we can have a fresh baked treat anytime without a big batch of cookies!
FLASH FREEZE: I will take each item like a cut out scone or a ball of cookie dough and put them on a greased cookie sheet then let them freeze over night, the next day I will throw each ball together in a bag so they don’t all stick together in one mass that way. Ask me if you have any questions about that
