Coconut is my all time FAVORITE flavor! I can’t get enough of the smooth, creamy tropical taste! My favorite drink is a Piña Colada, I only indulge in these once a year, until now! I created a healthy smoothy that gives me my Piña Colada fix, I even splash a lil coconut rum into once in a while. This is the second post in my “Smoothies” series. Piña Colada Smoothie…
- 1 Cup Knudsen’s Pineapple Coconut Juice
- 1 Can Coconut Milk (cold or warm doesn’t matter)
- 1 Cup flaked raw coconut
- 2 Cups Pineapple (I use fresh but you can used canned)
- 2 Bananas
- 1 Tbsp Raw Honey
- 2-4 Cups Ice
Toss it all (but ice) in a blender (I use Vitamix) and whiz up! Add ice, whiz up again. Pour in a glass, stick a little umbrella, maraschino cherry and slice of pineapple on top. Go find a hammock and enjoy!
MAKE IT REALLY TASTY: Add 1-2 shots of coconut rum, 1/2 cup cream of coconut and 1 cup sweetened flaked coconut.
Mango Tropical Twist…
One of my kiddo’s favorite flavors is Mango. I made this smoothie up just for her. Enjoy!
- 2 Cup Knudsen’s Pineapple Coconut Juice
- 1 Fresh Mango peeled and seeded
- 1 Cup Chobani Plain Yogurt (if you are dairy free then use 1 can coconut milk)
- 2 Cups Pineapple (I use fresh but you can used canned)
- 2 Bananas
- 1 Tbsp Raw Honey (optional)
- 2-4 Cups Ice
Toss it all (but ice) in a blender and whiz up! Add ice, whiz up again. Pour in a glass, add a little umbrella and a maraschino cherry and sliced pineapple rolled in coconut kabab. Go find the nearest pool and enjoy!
