Yummy Recipes!!! “Gone To The Beach” Recipe Round Up…

This week you might start to think I am turning Strive For Progress into a recipe blog! Well I love cooking and recipes but that is not my plans! My family loved last weeks beach meal plan SOOO much I couldn’t help but share all the yummy flavors and recipes with you! Next week I will have a new meal plan for you, Mike back with another great financial post, and I hope to have a toddler post to compliment the Kid Savvy post I just did last week! I want to throw a quick thank you out there today to all the people who pinned my heal a sunburn post! You are all amazing, what a humbling experience to see so many people appreciate that post! I hope you stick around to find more inspiration at Strive For Progress!

OKAY! The long awaited recipe round up is here! I feel a little bad about this too because some of the recipes you probably want the most are coming later this week so hang in there with me! The smoothie post is waiting and ready to be posted so I will be doing that one on Wednesday! Friday will be sweets day! I will post the Pineapple Crisp Oatmeal, Cayman Coconut Cheesecake and Coconut Cinnamon Rolls! WATCH OUT because Friday’s post is going to put pounds on yer bum just reading it so beware! :D Below are some pictures and recipes from last week. They were all so delicious that I had to make sure you had them all! Enjoy!

Crock Pot Butter Chicken…

Acquired from All You Magazine Issue 5, May 25, 2012

  • 4 tbsp butter
  • 2 onions, (thinly sliced)
  • 2 lbs skinless chicken breasts
  • 1 2-in piece fresh ginger (cut into 1/2 in slice)
  • 4 cloves garlic (coarsely chopped)
  • 1/2 cup slivered almonds
  • 1 cup plain yogurt
  • 2 tsp garam masala
  • 1 tsp salt
  • 1 15oz can diced tomatoes, (drained)
  • 1/4 cup heavy cream
  • 3 Tbsp chopped fresh cilantro (garnish)
  • 6-8 cups Cooked rice (on the side)
  • 1 whole Sliced tropical fruit like mango, pineapple, papaya (side dish)

1. Melt butter in a large skillet over medium high heat. Add onions and cook, stirring until softened and beginning to brown, 5-7 mins. Scrape into slow cooker. Place chicken pieces on top. (So I actually just heated the butter up in the crockpot on high heat and cooked the onions for 5-10 mins then tossed everything in, you really could skip this step and just dump everything in! Trust me after 4-5 hours in the crock the onions will be cooked!)

2. Combine ginger, garlic, almonds, yogurt, garam masala, and salt into a food processor and process until smooth. scraping down sides of bowl as necessary. Add tomatoes and pulse once to combine. Pour mixture over chicken. Cover and cook on low until chicken is tender, 4-5 hours. Stir in heavy cream, cover and cook until warmed through, about 5 minutes. Sprinkle with cilantro just before serving, if desired.

4. Serve chicken over rice with side of fruit.

Verdict: AMAZING!!!! We all gobbled this one up! Chicken and Rice is a huge staple of ours when we head to the beach so this was fun to eat! We talked about many fun memories of our time on vacations of past to our favorite beach on Grand Cayman Islands!

Seared Tuna With Mango Salsa

Want to know how brave Mae is?! Ya so I have NEVER eaten fresh tuna! I ate tuna out of a can when I was a kid but this was the FIRST time I ever had fresh tuna! The brave part was the fact that I decided to cook it myself! I want to tell you that it is VERY important to step out of your comfort zone whenever possible! This tuna dish was amazing! The kids even ate it all up, they LIKED it! Also note that this meal goes lovely with a tasty Landshark Lager! Yum! I am NOT a fish lover and I loved this dish so that means you must try it! It also means I guess I am becoming a fish lover! Thanks again Ina!!!

 

Nana’s Fish & Chips Island Style With Coconut

I found this recipe in my Mama’s stash! I added the coconutty island twist! Enjoy!

  • 1-2 Halibut filets
  • 2 Cups Flour
  • 1 Bottle Beer
  • 1 Tbsp Seafood Rub
  • 1 Cup un-sweetened coconut flakes
  • About one cup coconut oil maybe more or less
  • 1 bag frozen waffle fries

Mix Flour, Coconut & Rub, then blend in Beer.

Clean & pat dry fish 7 cut into pieces or strips

Coat with dry flour

Coat with batter

Fry in hot oil for approx 3 – 4 min/side (until golden brown)

Keep warm in oven

Cook waffle fries as directed.

Serve with side of tropical fruit such as papaya, pineapple or mango. The fish goes well with homemade ranch or tarter sauce!

Verdict: Oh YUM YUM YUM! Once again this “non-fish” lover comes out of her shell (no pun intended!) I loved these and so did the kids! Fish & Chips is hubs favorite dish so he loved it!
